Blackberry wine is one of the most delicious berry alcoholic drinks, which has a rich aroma. If you have fresh berries, making this drink at home is not difficult, if you follow the proportions indicated in the recipe and clearly follow a certain algorithm of actions. Selection and preparation of ingredients
For the preparation of wine, it is recommended to use only ripe and juicy blackberries without decayed areas and mold. Garden varieties of this culture contain a greater amount of sugar, so the wine from them is tastier, but you can use wild fruits, increasing, if necessary, the amount of sugar in the recipe.

Before preparing a drink, the fruits are peeled of sepals. If necessary, the blackberry can be slightly rinsed with water, but it is not recommended to wash the berries well - on their surface are the natural yeast necessary for fermentation.
Blackberry Wine Recipe

Nutritional value per 100 g:
- Grind the blackberries in a meat grinder. Add the resulting mass into a large pan.
- Add 400 g of sugar to the crushed berries, mix well.
- Separately dissolve 1 kg of sugar in 10 l of water. Add the resulting sugar syrup to the pan with the berry mass, mix.
- Pour another 5 liters of water into a container with a blackberry, and then add another 800 g of sugar to the mixture. Mix the mass well.
- Leave the pan with the leaven at room temperature, covering it with a cling film on top. After 24 hours, the mass should begin to ferment.
- Allow the berry mixture to ferment for 3 days, stirring it several times a day. After each mixing, cover the container with cling film.
- Carefully drain the liquid from the resulting mixture into a separate pan using a hose, leaving the pulp in the original container. Pour the wine into jars or bottles, adding 320 g of sugar to the drink. The containers should be approximately 1⁄3 full of liquid.
- Wear rubber gloves on the neck of containers with raw materials, having previously punctured them with a needle in several places - this is necessary for the release of gases formed during fermentation.
- Add 5 l of water and 160 g of sugar to the pan with the remaining pulp, mix and cover with cling film. Leave the mass for 12 hours at room temperature for fermentation.
- Strain the mixture of water and pulp through cheesecloth, squeezing the remaining berry mass by hand.
- Add the expressed liquid to the wine containers, and then put on the rubber gloves with holes on the neck again.
- Leave the blackberry product in a warm room to continue the fermentation process. On days 4, 7 and 10 add 240 g of sugar to the drink, stirring it thoroughly until the crystals are completely dissolved.
- After the last sugar addition, let the wine stand for another 24-30 days. Then strain the drink and pour it into clean bottles.
- Containers with blackberry wine should be removed to the basement or cellar for 1 month, so that the drink is infused and acquires a beautiful color. After that, the wine is ready to drink. The fermentation process is about two months.

It is recommended to keep finished homemade blackberry wine in a dark basement or cellar, tas under the influence of sunlight the product may become cloudy. For storage, glassware with a hermetically sealed lid is best suited. In such conditions, at an air temperature of no more than + 18 ° С, blackberry wine can be stored for up to 5 years, having a pleasant taste and rich aroma.
