Selection and preparation of ingredients
It is customary to cook soup in Russian cuisine from wild mushrooms, but due to modern conditions in the recipe they are often replaced with champignons. Artificially grown product is available and safe, unlike many forest relatives collected by inexperienced mushroom pickers or in ecologically disadvantaged regions. Mushrooms should be white, clean, without suspicious stains and mucous secretions.
Important! Dark champignons were stored incorrectly, so you should not buy them, especially if the plates are almost black.
Mushroom and Potato Soup Recipe

Nutritional value per 100 g:
- First of all, you need to cook meat broth. To do this, boil the breast almost until ready.
- As you cook, you need to remove the "noise" from the surface of the water so that the broth is clean and transparent.
- While the meat is being cooked, the mushrooms are washed and peeled, and chopped with plates.
- Dice the onion, carrots as well.
- Check the readiness of the meat 15 minutes after boiling - it should be almost ready.
- Peel the potatoes, cut into large cubes and send to the pan. Water needs to be slightly salted and put a bay leaf there.
- After 5-7 minutes, thrice washed in the pan is added to the pan, left to cook for 10 minutes.
- Sunflower oil is poured into the pan, heated and mushrooms are sent to fry.
- When the liquid secreted by the champignons evaporates, add onions and carrots.
- As soon as the fried vegetables turn golden, add cream, a little salt and a couple of spoons of the broth. Allow to boil for 2-3 minutes and pour everything into the pan.
- A few minutes before readiness finely chopped herbs and sent to the soup.
- Creamy soup will complement homemade bread perfectly.
