If you buy a product in a large store or in a market, then remember that the word “caviar” without additional definitions refers to salmon eggs, and for other cases you need to specify which product you have in mind by adding the name of the fish. The first step in preparing for further cooking is to remove the pail - the film that surrounds the eggs like a bag. It is quite tender, like caviar itself, therefore it requires accuracy.
Important! For washing and preparing caviar, use only filtered water. Unfiltered can spoil the delicate taste of the final product due to the high content of chlorine and heavy metal ions.
Rinse the stain in cold water. Make cuts on the sides. Prepare a pot of salt water (3 tablespoons per 1 liter), squeeze the eggs into the water, and then strain them into a colander. Now you can proceed to further culinary processing.
